Recipe- Mini Spinach Pies with Video!
Mini Spinach Pies
8-10 Servings/18 Pies.
3.5 cups flour
3 3/4 oz of extra virgin olive oil
8 oz warm white wine
2 tsp salt
15 oz spinach
5 oz ricotta cheese
1 large egg
4 oz grated parmigiano reggiano cheese
Add 3-4 oz leftover or grilled chicken.
I like to make these the day after I made blackened chicken, the added spice is great in these.
You can also simply add a tsp of cayenne pepper to the stuffing mix for the spice if you do not want chicken added.
Mix all ingredients for the dough and mix until dough is formed.
Cover dough with plastic wrap and start mixing the stuffing.
Boil spinach and squeeze out the water.
Cut the boiled spinach and place in a mixing bowl.
Mix in ricotta cheese.
Mix in egg.
Mix in grated cheese, salt and pepper.
If adding chicken, shred or cut chicken and add to mix.
Mix all in ingredients.
Preheat oven to 350 degrees.
Cut your dough into 18 pieces.
May be more or less depending on the size you want your pies.
Roll out dough into circles and place over the
one of the cups of the mini pie pan.
I like to do this one pie at a time.
Place 1.5 tbs of filling in the middle of the dough and let the filling sink the dough down in the cup.
You may need more or less filling per pie depending on the size of your pan.
Continue until you pie pans are fill and the dough and stuff are gone.
Wet the borders and pinch together the open dough over the filling, a hole here and there are fine.
Bake for 30 minutes in preheated oven.
Eat and enjoy!
